Peruvian Shrimp Chupe

In Peruvian gastronomy, one of the most traditional and emblematic soups is the so-called chupe de Camarones, a style of broth that combines various proteins such as shrimp, egg, evaporated milk, a bit of cereal that would be rice that is added and also some vegetables such as pieces of corn and potatoes. For the rest of the world, it is a somewhat strange combination, however, it is a combination that is completely successful in its country of origin.

Ingredients to make Peruvian Shrimp Chupe:

 1 kilogram of Shrimp

 ½ kilogram of potatoes

 ½ cup of Rice

 1 can of evaporated milk

 ½ piece of Onion

 1 clove garlic

 2 tablespoons of Oil

 2 pieces of Egg beaten

 100 grams of fresh cheese

 1 pinch of salt

How to make Peruvian Shrimp Chupe:

In the following image, you can see the ingredients that we will need to prepare this incredible and delicious Peruvian shrimp chupe.

To start we finely chop the onion and garlic, into very small cubes, as well as the ones we see in the following image.

Now in a saucepan, we put the oil, and once hot we add the chopped onion and garlic, along with a pinch of salt and pepper, and let it sauté perfectly.

Once the onion is fried, add two litres of water to the saucepan along with the shrimp extract and let it boil.

The shrimp extract can be bought directly in the supermarket or when buying the shrimp, we must order them whole, and when cleaning them, we squeeze the back of the shrimp head: the liquid we obtain is the shrimp extract, which is we gather and we add that to the water.

Once the water is boiling, add the rice and let it cook.

Meanwhile, on the other hand, we take the potatoes and chop them into cubes of about 1.5 cm. On each side, we also take the corn and chop them.

When the Peruvian shrimp chupe rice is halfway through cooking, add the potatoes and the pieces of corn and let it cook for a few more minutes.

When the potatoes are almost ready, add the shrimp to the broth and cook for 2 minutes.

After two minutes we add the cubes of fresh cheese, the beaten eggs and a pinch of oregano to the shrimp chupe, and stir to integrate everything perfectly.

A minute later, when you see the melted fresh cheese and the boiled egg, add the evaporated milk and mix very well. Let everything cook together for 2 more minutes and remove from heat.

We serve hot making sure that our plate contains all the ingredients of our Peruvian shrimp chupe, and that's it!
